This course takes you into the kitchens of Italian regions such as Lombardy, Piedmont and Tuscany to sample pasta, pizza, antipasti and risotto made the right way - fish and shellfish redolent of the sea, hearty treatments of meat and game and irresistible gelato. Italian CuisineAn introduction to the principles of planning, preparation, and presentation of the foods of Italy. The course will emphasize Italian ingredients, traditional and contemporary Italian cuisine, and menu structure and station organization for production. Students will explore trends, flavor profiles, preservation methods and cooking techniques unique to Italian cuisine, and plate presentation—all in the Ristorante Caterina de�Medici in the college’s Colavita Center for Food and Wine. Italian Cuisine Boot CampAs a participant in the CIAs Italian Cuisine Boot Camp, you will embark on a rigorous gastronomic tour of Italy. Each day, you will explore the different regions of the country, improving your Italian geography while learning about the flavor profiles that distinguish Italian cuisine. You’ll expand your Italian and culinary vocabulary along the way as you taste indigenous ingredients and prepare regional specialties under the direction of our renowned faculty.
During this four-day course, you will become acquainted with the culture, traditions, and customs that contribute to regional Italian cuisine. Be prepared for an intense, yet fun-filled adventure.

When you enroll in Italian Cuisine Boot Camp, you’ll recieve two chef’s uniforms, each with a jacket, pants, and neckerchief. Paper chef’s hats, side towels, and aprons will be provided in class.

Italian CuisineAn exploration of cooking techniques, ingredients, and spices unique to Italian cuisine. Students will prepare Italian à la carte menu items based on modern and traditional regional Italian cuisine. The ability to organize an assigned station based on fundamental cooking methods will be stressed. Focus is placed on the production of menu items, plate presentation, and ways in which current cooking techniques are applied to Italian cuisine—all in the colleges Wine Spectator Restaurant.
