Course Description:
'' This qualification has been designed for students who are interested in developing skills in Cake Decoration or Sugar flower making as a vocational study. Cake Decoration qualification is available at Levels 1, 2 and 3. The cake decoration or sugar flowers course is a September start only. It is suitable for students 16 years and over, and it runs at a variety of Community Sites. Each level of the courses are run over thirty weeks enabling the student to complete the Introductory and Intermediate Level. The Advanced units may be completed on a yearly basis of one unit per year (three units in total). There are no written papers, although students will be expected to keep a course folder demonstrating knowledge of the course, as well as some design work. Equipment and materials will be required by the student, although this will be discussed at the first lesson. Every attempt will be made to keep this to a minimum, improvising where possible. Students on this course are expected to wear a white overall or apron. At Introductory level which is the equivalent to NVQ level 1, areas to be covered by the Sugar Flowers Stage 1 and the Cake Decoration course include: Health and Safety Preparation and uses of flower paste *Sugar Flowers only Various flowers including, carnations, roses, freesia, sweet peas, fuschia, azalea *Sugar flowers only Equipment, colouring and glazing, ribbons and taping. *Sugar flowers only Uses of royal icing, coating, piping, piped flowers, lettering Uses of marzipan/sugarpaste, covering, crimping, embossing Basic design work Level 2: Development of the above plus: Flowers to include, honeysuckle,chrysanthemums, poppies, cyclamen and miniatures *Sugar flowers only Uses of pastillage, stencilling Flower making and floral arrangements *Sugar flowers only Marzipan modelling Level 3: Advanced royal icing, collars, full collars, floating collars Advanced sugarpaste, bas relief, quilling decoupage Modelling, hand modelling, rolling, cutting, using moulds ...''
