'' 1 Students are introduced to bakery and pastry products and produce a range of basic and advanced desserts. The course consists of four modules: meringue and japonaise desserts; frozen confections; choux pastry and puff pastry.
2 Students are introduced to modern, professional baking and patisserie methods applicable to the luxury hotel and restaurant environment. Students learn about ingredients, weights and measures, sanitation, personal hygiene and safety, the technology of pastry products, and pastry shop organization
3 Building on the skills and theory covered in year one, students cover the following: specialty breads, breakfast breads, pastries, cookies, decorated cakes, individual pastries, chocolate decorations, candies, sugar work, decorations, ice cream, frozen desserts, plated desserts, and souffles. ...''
