'' The course prepares the successful student for a career in the Hospitality Industry. As well as developing skills in those aspects of catering, costing and organisation required of the trainee or supervisor in any hospitality business, an understanding of the legal and socio-economic factors which affect and control the industry will also be explored.
The skills associated with all aspects of hot and cold kitchen will be further developed, with particular attention paid to costing, finance and control systems.
Structure This course may be studied full-time or on a day release basis. Day release sessions run one afternoon and evening per week. This HNC is made up of 12 credits, including one graded unit. All units are internally assessed under the guidance of SQA.
Content The following areas will be studied: - Food Hygiene Intermediate - Control Systems - Food Classification and Purchase - Supervision - Sweets and Desserts - Hot & Cold Kitchen.
Career Opportunities Successful students would be suitable applicants for the position of Catering Manager or Head Chef.
Progression Students can progress to the second year of the HND Professional Cookery.
Preferred Entry Requirements The entry options are as follows: - SVQ Level 2 Food Preparation & Cookery - 1 Higher - A relevant group of NC modules.
Mature applicants with relevant industry experience but without formal qualifications are encouraged to apply.
