Course Description:

'' Nutrition plays a critical and often under appreciated role for our health and well-being. This broad-ranging course will explore the intimate relationship between organisms and their food supply from early life forms through modern humans. We will take a "cradle to the grave" perspective as we review the latest research related to fetal growth, development, cognition, cancer, health, mood, diabetes and aging processes. Major dietary shifts that have in some cases led to disease-like symptoms in modern society will be evaluated along with compelling evidence that the standard American diet is deficient in levels of omega-3 essential fatty acids. Towards the end of the course we will explore some surprising variation in cultural food practices before turning to the effects of globalization & mass production on the quality of our food and the environment. ...''
