Course Description:

'' This qualification will provide you with the practical skills and knowledge to plan, organise, prepare and cook food in a commercial kitchen environment. You will learn about effective communication, occupational health and safety procedures and workplace hygiene. You will also learn skills to produce quality foods, plan menus, prepare food according to dietary or cultural needs, control costs, work as part of a team, and serve a range of meals in a professional manner. You will practice the skills you have learned in a simulated work environment or at an appropriate hospitality establishment.

The commercial cookery qualifications will prepare you for every aspect of commercial cooking: from purchasing food, kitchen supplies and equipment to preparing, cooking, and serving techniques, as well as portion control and presentation. Students will also gain supervisory skills and have the capacity to plan menus, estimate food and labour costs and manage the efficiency and hygiene requirements of the kitchen. Students enrolled in cookery qualifications prepare meals for service in the Epicure Training Restaurant at the Bunbury Campus and at the boutique training café at the Margaret River Campus that prepare students for the cut and thrust of modern hospitality establishments.

Successful completion of this qualification provides you with the opportunity to become a commercial cook (non tradesperson status), or gain an apprenticeship to become a qualified cook. You will need to be employed and registered as an apprentice before you can commence apprenticeship training.
