Course Description:

'' Nutrition studies the science of foods, including the sources, functions, and interactions of nutrients, the physiology of digestion, absorption, metabolism and excretion, the changing nutritional requirements throughout the lifespan, and the relationship of nutrition to health and disease. Cultural and socioeconomic aspects of food ways will also be examined. Prerequisite: two terms of anatomy and physiology. This course is designed for students pursuing a four-year degree in nursing and is transferable to nearby BSN programs. Three credits. Three billable hours. Offered as a web-based course only.

Course Objectives and Grading Information
Course Objectives:

At the conclusion of this course the student will be able to:

For each of the 3 macronutrients (carbohydrates, lipids and proteins), describe the basic chemical structures and functions in the body, describe how each is digested and absorbed, name a variety of food sources, list the appropriate intake levels and describe symptoms of deficiencies and excesses
For each of the 3 categories of micronutrients (vitamins, minerals and water), describe the basic functions in the body, name a variety of food sources, list the appropriate intake levels and describe symptoms of deficiencies and excesses
Describe the relationship between food and energy, body requirements, weight control, exercise, and risk for disease.
Describe the components of an optimal diet plan for healthy individuals as they progress through the life span, and utilize some of the conventional programs in planning/analyzing these diets.
Describe the various cultural and socioeconomic factors that influence dietary choices and consider these choices when using conventional programs for planning/analyzing diets.
Access and analyze the value of nutritional information available through a variety of sources including databases and the world-wide web.
