As a participant in the CIAs A Taste of Mexico: Puebla and Oaxaca hands-on program, you will: Unravel the mystery of traditional cooking from the heart of Mexico: Puebla and Oaxaca.
Identify, taste, and learn about different chiles and study their many uses.
Prepare and sample unique, complex dishes from Central (Puebla) and Southern (Oaxaca) Mexico using indigenous ingredients.
Explore ancient and modern techniques for preparing salsas, moles, and many other recipes.
Visit traditional Latino markets for insight into the ingredients that shape Mexican cuisine.
