'' It’s an exciting time in the baking and pastry field. More Americans are gaining an awareness and appreciation for the wide variety of fresh bread and pastry options available. In this course, you will get an overview of the field and learn about the hottest career opportunities, from hotel pastry chef to artisan bread baker to chocolate candies producer to bakery owner.
During this week-long exploration of the baking and pastry arts, you will learn the fundamentals of baking and the techniques used in creating basic preparations such as cookie doughs, pie doughs, sponge cakes, hearth breads, flatbreads, and chocolate desserts.
In this class you will:
Create a variety of baked goods from Italian classic biscotti to the Indian staple chaptis Learn how cocoa and chocolate differ Study the ingredients, equipment, techniques, terminology, and recipes that define contemporary baking and pastry Watch as one of our CIA at Greystone baking or pastry chef-instructors demonstrates advanced or specialized techniques. ...''
