'' Heres your chance to combine the excellence of CIA instruction with an extended curriculum and four evenings of dining at exciting local Napa Valley Restaurants. Based on our popular Career Discovery curriculum, this four day course will propel you to new heights of cooking fundamentals. Your assignments will include hands-on training in knife skills, kitchen terminology, and preparing international dishes using moist and dry heat cookery skills.
You will also: Spend afternoons in flavor dynamics sessions; olive oil tasting, herb tasting, salt and vinegar tasting
Learn the fundamentals of wine and food pairing
Understand important food storage and handling concepts
Visit a local winery for an insight to the winemaking process in the Napa Valley
Participate in a knife skills practical examination at the end of the week
Learn presentation techniques to enhance the foods we serve every day
Dine at Greystones Wine Spectator Restaurant and three other exceptional Napa Valley Restaurants, exploring the culinary talents and flavors that shape the Napa Valley dining scene
