Course Description:
'' Everyone who works with food is responsible for ensuring that customers are protected from contaminated food and also from the risk of food poisoning. Food poisoning causes discomfort, absence from work and in some cases death. New legislation demands that all food handlers know about Good Hygiene Practices and that all registered food premises have a Food Safety Plan by their compliance date. (This is a nationally accredited course - THHGSO1)
Course Rationale A good standard of hygiene depends upon a food handler knowing: �How to perform a task hygienically; �Why the task should be carried out in a particular way; and �Performing all tasks properly, therefore ensuring hygiene standards are maintained.
Course Objectives Upon successful completion of this course participants should be able to identify: �The difference between food that has been spoilt and food that can cause food poisoning; �The principles of food hygiene that must be applied in order to prevent or minimise the transfer of bacteria to food; �How raw and cooked foods should be stored and the part played in this process by time and temperature; �Requirements for cleaning and sanitation in food production and handling; �Good hygiene practices including personal hygiene; �Strategies for pest control.
Target Market This course is designed to give participants a basic understanding of why hygiene is so important when handling food, how and why food poisoning and food spoilage occur and the most effective ways of preventing these from occurring. Prerequisites No prerequisites for this course.
